Scott is dedicated to hospitality having worked his way up through the ranks over the past twelve years, with experience in food and beverage, reception and operations. During this time, he has worked with many prestigious companies across Cork county and Clare. Scott’s vast experience in managing and guiding all operation team members, ensures the seamless delivery of exceptional customer service throughout your conference.

Norina O’ Callaghan

Sales & Marketing Manager

From the initial proposal stage, Norina will work very closely with each association conference organiser to ensure conference goals are achieved.  Listening to your specific requirements which are unique to each conference, discussing in detail options, budgets and outline suitable recommendations.

Rose Broderick

Assistant Meeting and Events Manager

Rose will be your dedicated hotel contact during the running of your conference.  From greeting you in the morning with a friendly smile, ensuring all conference setups are correct and supporting you from beginning to end of your conference with us, delivering on your expectations, and exceeding where possible.

Mariska Smit

Senior Conference Co-ordinator

Mariska will have her eye on the detail when it comes to the planning and the pre-organisation of your conference.  She will be one of the friendly faces you meet at your preplanning meetings. She will be on hand to answer your queries and will be at the end of the phone should you require last-minute adjustments to requirements.

Alexion Ramos

Executive Head Chef

Executive Head Chef, Alexion Ramos, has had a passion for food from a young age. Alexion grew up in the sunny Algarve, Portugal. From an early age, he has worked his way up through the ranks in the kitchen, working in Portugal, Switzerland, Mexico, Spain and Ireland. During this time Alexion has worked for many prestigious companies like Movenpick Hotels, Google Europe and Dundalk Stadium Racecourse. In July 2022, Alexion made the move to Clayton Hotel Silver Springs, to take up the role of Executive Head Chef. Alexion’s passion is to create great food from locally sourced seasonal ingredients.
