From greeting you in the morning with a friendly smile, ensuring all conference setups are correct and supporting you from beginning to end of your conference with us, delivering on your expectations, and exceeding where possible.

Executive Head Chef, Alexion Ramos, has had a passion for food from a young age. Alexion grew up in the sunny Algarve, Portugal. From an early age, he has worked his way up through the ranks in the kitchen, working in Portugal, Switzerland, Mexico, Spain and Ireland. During this time Alexion has worked for many prestigious companies like Movenpick Hotels, Google Europe and Dundalk Stadium Racecourse. In July 2022, Alexion made the move to Clayton Hotel Silver Springs, to take up the role of Executive Head Chef. Alexion’s passion is to create great food from locally sourced seasonal ingredients.
